Rail-to-rail output means the amplifier can swing within millivolts of each supply rail, preserving dynamic range in low-voltage single-supply designs. The input common-mode range extends to the rails as well, so you don't lose headroom at the top or bottom of the signal. This is critical when the supply is 2.7 V and every millivolt of signal range matters.
