The 8-channel 12-bit ADC and single 12-bit DAC cover analog sensing and control. If your design needs more than a couple of serial buses and a few analog inputs, the pin count will be the limit, not the core.
The STM32L151CBU6A is a pin-compatible alternative from the STM32L1 series, but it runs a Cortex-M3 core at 32 MHz — half the speed and no FPU. If you need the DSP/FPU capability of the Cortex-M4, stick with the STM32F318K8U6.
